Passover Savory Sausage & Quinoa Casserole

Serves 4-6



  • 1 pound Joburg Kosher Boerewors
  • 1 medium size apple-cored, peeled and chopped
  • 1 medium size onion, chopped
  • ½ cup celery
  • 4 cups cooked quinoa
  • ½ cup raisins
  • 1/3 cup fresh parsley, minced fine
  • 1 tbsp. brown sugar
  • ½ tsp. salt
  • ¼ tsp. allspice, ground
  • ¼ tsp. cinnamon, ground
  • 1/8 tsp. pepper


  1. In a large skillet, cook the boerewors with the apple, onion, and celery over medium heat until the meat is no longer pink. 
  2. Drain. Add in the rest of the ingredients.
  3. Transfer to a greased 2 qt. baking dish. Cover and bake at 350 degrees for 25-30 minutes or until heated through.

Passover Breakfast Can Be Great! Try this Salami Omellete

6-8 servings
  • 1 Joburg Gourmet Veal & Beef Salami, sliced thin
  • 10 large eggs
  • Margarine
  • 1 onion, sliced
  • Salt & Pepper, to taste
  • Water, to add to the eggs
  • Margerine or oil (for frying)


  1. In a large pan, fry the onions in margarine or oil until transparent. Add a dash of salt and pepper. 
  2. Add the slices of salami into the pan. Fry the salami for a few minutes on one side. Flip the slices over and fry on the other side for another couple of minutes.
  3. Meanwhile, beat the eggs with about 1/8 cup water. 
  4. Pour the beaten eggs into the pan with the salami. Cook until the eggs are done and the salami is sizzling. The eggs should not be runny.

You can keep the omelette open or fold it over if desired. Let your family enjoy an excellent breakfast, yom tov or chol hamoed!

Grilled Boerewors Skewers

Serves 4



  • 1 pkg. traditional (or any flavor) Joburg Boerewors links, cut into approx. 1 in. pieces (or can use ½ cut-up boerewors coil)
  • 4 sweet peppers, any color (or the equivalent amount of mini peppers), cut up into approx. 1 in. pieces
  • Large white or yellow onion, cut up into approx. 1 in. pieces, if desired
  • Skewers appropriate for grilling
  • Olive oil
  • Garlic powder
  • Hot paprika
  • Garlic bread (pre-made or home-made: if making home-made, then buy 1 loaf unsliced French or Italian bread)
  • Margerine for spreading


  1.  Alternate boerewors, peppers, and onions onto skewers for grilling.
  2. Brush with olive oil. Sprinkle garlic powder and hot paprika over skewers to taste.
  3. Grill on a grill pan, or on a grill, until boerewors are browned and sizzling.
  4. Place grilled skewers on a plate covered with paper towels to drain. Remove skewers. Serve warm with garlic bread.

Gourmet Sausage Puffs


 Makes 4 sausage puffs or 8 appetizer puffs



  • 1 pkg. Joburg Moroccan Gourmet Sausages (any flavor will work but Moroccan tastes best)
  • 1 Pepperidge Farm puff pastry sheet, defrosted for about 20-30 minutes until pliable
  • 1 beaten egg mixed with 1 tsp. cold water (you will not need to use all of this)
  • Poppy seeds and/or Sesame seeds, if desired



  1. Cut 1 puff pastry sheet into 4 even squares. Lay one sausage near the bottom of each puff pastry square. 
  2. Cover sausage with bottom of puff pastry sheet and keep rolling up until sausage is completely rolled in puff pastry. Dab a bit of cold water along edge of roll and press to seal. Sausage's ends should be sticking out of puff pastry. Do this for all 4 sausages.
  3. Brush tops of puff pastry lightly with beaten egg mixture so puff pastry browns nicely. Sprinkle lightly with either sesame seeds or poppy seeds, if desired. Bake at 350 degrees until puff pastry has puffed up and is lightly golden brown, about 15 minutes depending on your oven--do not overbake. 
  4. Remove from oven, let cool a few minutes. If making appetizer size, cut each sausage puff in half. Serve warm.

Joburg Moroccan Gourmet Sausages

• 3 quarts chicken broth
• 2 x 12oz packages of Joburg Peri Peri Boerewors Sausages
• 1/2 can cream of coconut
• 4 potatoes diced
• 1 large onions, cut into medium dice
• 2 large carrots, peeled and cut into rounds or half rounds, depending on size
• 2 large stalks celery, sliced 1/4 inch thick
• 1 teaspoon fresh thyme leaves
• 2 cans red kidney beans
• Spicy pepper ( to your liking)

1. Bring broth to a simmer over medium-high heat in a large soup kettle.
2. Add Boerewors, Cream of Coconut and Kidney Beans, to the simmering broth then add carrots, potatoes, celery, thyme and onions. Reduce heat to low, partially cover and simmer until boerewors release their flavor, 45 minutes.
3. Garnish with Joburg Biltong & Chives.

Joburg South African Biltong Salad



1 package Biltong (2oz)

2 Plum Tomatoes

6 basil leaves

1 clove minced garlic

2 tablespoon Extra Virgin Olive Oil

½ small purple onion



Mix all ingredients together and leave in fridge for 1 hour. Flavor more enhanced when left overnight.


Serve over your favorite cracker as a delicious appetizer.
